Almond Butter Banana Bites
I had my doubts too. I dislike anything with banana. Chocolate with banana, peanut butter with banana, chicken with banana bluh. But a few weeks ago I came back to my apartment that I had abandoned for about 2 months to work from there and found nothing in my fridge…well aside from a very moldy cucumber, but it didn’t taste great, kinda bitter, so I just fed it to the seagulls.
I had an almond butter in my pantry that my smart past self had bought a while ago and I had bought some cashews and a banana, because – well, great snack. And long story short: These healthy Banana bites were born. Now the long story…
How To Make Healthy Banana Bites
Step 1: Peel the banana. How do you guys peel the banana? I used to always peel it from the site that didn’t have the stem on, but changed this life-long habit a few years ago. Turns out my instinct was right, another example why you should listen to your intuition.
Step 2: Slice the banana lengthwise. As you can see, that banana has seen better days and they were not recently. Why did I even choose this banana out of all the bananas in the store? I’m never going back to this grocery store, it’s their fault.
Step 3: Take a spoon or a knife and spread the almond butter over the banana. This was harder than I thought. Like, Alexander Flemming discovered Penicillin (probably after he ate a moldy cucumber like myself, this is a common problem throughout the history of great minds)…I have trouble spreading almond butter on banana. Today’s university education is seriously worth nothing. Really though, if you find it hard, hang in there and keep spreading. It will work out in the end.
Step 4: Reconstruct your banana. Top with the other part of the banana.
Step 5. Sprinkle chopped cashews or almonds all over. I used roasted cashews, use your favorite nuts or coconut flakes to cover this banana.
Step 6. Slice into bites. Now it’s time to cut that banana into bite-sized pieces.
Step 7: Eat! Enjoy the banana bites for breakfast or a healthy sweet snack!
- 1 banana
- 3 tsp almond butter
- 2 Tbsp chopped cashews
- Slice banana length-wise.
- Spread almond butter over each slice and "glue" the banana slices together.
- Top with cashews
- Slice in bite-sized pieces.
- Enjoy immediately!
